和海 - Nagomi

4 minute walk from Mukogawa Station
Hyogo Prefecture's #1 ranked shop. Chicken and primo dried fish make this one a solid pick for a recommendation.
麺や青雲志 - Seiunshi
Mie-ken, Matsusaka-shi, Gongenmaecho 405-14
8 minute walk from Gongenmae Station
Located in Mie Prefecture, south of Nagoya. One of my personal best bowls of the year. Only open for a few hours at lunch, and they almost always sell out. Three or four different styles, and the two I tried were a testament to this shop.
ラーメン無法松 - Muhomatsu
Fukuoka-ken, Kitakyushu, Kokurakitaku, Kantake 2-10-24
30 minute walk from Kokura Station
Kokura isn't on many tourists hit lists, but if it was, this is the ramen to try. Famous, and super out of the way. Solid tonkotsu ramen in the land of tonkotsu ramen. The soup is lighter than most pork bone soups.

Hyogo-ken, Amagasaki-shi, Minamitsukaguchicho 3-29-13
8 minute walk from Tsukaguchi Station
The legend from Tokyo moved out to Amagasaki a few years back. Golden chicken oil, premium ingredients, and an atmosphere that needs to be seen. Perfect ramen in silence that is worth the trek from nearby Osaka or Kobe.
浅月 - Satsuki
Okayama-ken, Okayama-shi, Kita-ku, Hokancho 2-5-25
5 minute walk from Okayama Station
The definition of old school. Open since 1948, if you are every in Okayama seek this one out. Classic shoyu.
